Feliz Navidad
So I had leftovers for breakfast and lunch and decided I needed to spice it up for dinner! So I made Tacos. These were delicious and soooo easy. After last nights labor intensive dinner, I am extatic to report that tonights dinner was cooked, eaten, put away and cleaned up in 50 minutes! These were fresh filling and delicious. Next time I would probably add bell pepper, onion and garlic to the meat.
Paleo Tacos:
1lb Groung beef cooked and drained
Add to the meat:
Cumin
Chilli Powder
Garlic Salt
Tapatio (optional for some spice)
(a shake or 2 of each)
Assemble with:
Iceburg lettuce cups (layer 2 or 3 for strength)
Sliced Olives
Avacado
Roasted Tomato Salsa (from Trader Joes)
My review of this is NOM NOM NOM! So great, so easy, definitely recomend it!

Day 1: With a Grain of Salt :)

So I officially made it through day 1. I decided that my paleo challenge is probably going to be with a "grain of salt" literally. I made it through breakfast and lunch without any faults, but come dinner I tried making butternut squash "cakes". When I was met with a bland, but nicely textured, butternut hash, I wanted a sauce to make it taste better! So I faltered by making an alomost-paleo sauce to drizzle over the cakes and chicken. It was delicious! (in a spicy-asiany-doesn't really go with butternut-kind of way) Still not bad my first day and a new recipe. I will be eating leftovers for the next 3 days, So I should post a new meal on Thursday probably.
