Paleo Portobello Pizzas

Since the beginning of my Paleo journey, I've tried a few pizza substitutes. My conclusion is that you are missing two big ingredients: cheese and crust. This recipe utilizes some classic pizza flavors and still qualifies for a healthy Paleo diet. It is my favorite Paleo pizza yet.

Paleo Portobello Pizzas

4 large portobello mushrooms
1 jar low-sugar marinara sauce (I get mine from Trader Joe's)
1 red bell pepper, chopped
1 can black olives
1 lb pork sausage, lean
1 package turkey pepperoni
1 red onion

1. Remove and dice the stem of the mushrooms and set aside. With a spoon, scrape out the under "ribs" (black stuff) from the mushroom caps. If your mushrooms are thick enough, slice the mushrooms in half (creating two thin mushroom halves).

2. Sauté the pork sausage until fully cooked. Remove the meat from the pan onto a paper towel-topped plate. Then, sauté the chopped mushrooms and bell pepper until nearly cooked.

3. Place the mushroom caps on a sprayed baking sheet. Spread marinara sauce on each. Then, cover the sauce with the sautéed peppers and mushrooms. Top your 'pizza' with the cooked sausage, pepperoni, olives, red onion, and any other toppings you may want. Bake at 350 degrees for 15 minutes and serve.

    WOW.. Just made that for dinner tonight and it was fantastic. I've tried meatza once and it was ok, but this totally blew it out of the water. Once I was done eating I wanted to go back to the store and get some more portobellos. Bravo

    I made these and it turned out great. I first cooked the sausage until browned then added the chopped up mushroom stems and garlic. Once that browned a little I added half a can of crushed tomatoes. I let that simmer a little then topped the mushrooms with the mixture and added a little bit of mozzarella cheese then cooked in the oven. It was a very simple recipe this way as the sauce all cooked in one pan that way.

    Good stuff! Used Muir Glen canned pizza sauce whirled in the food processor with 1/2 jar of roasted red peppers as the sauce.

    Thanks for sharing this recipe it's definitely a really good reward for my brother who got his TABC Certification Online last week. But still work on the dough first. I'm not really the cook-type but I'd like to do something special for him.

    You can get marinara without sugar in it, I found one at Safeway that has all natural stuff in it and no sugar and is Safeway brand, I think it is the mushroom one.
