Mushroom and Spinach Crustless Quiche

1 Bunch of Spinach
8-10 Mushrooms
4 Eggs
1 Cup egg whites or Egg Substitute
¼ Cup Heavy Cream
½ Tablespoon Garlic Salt
½ Cup Blue Cheese

Pre-heat oven to 350. Chop the spinach and mushrooms. Sauté the spinach and mushrooms with the garlic salt. Press the vegetable mixture to one side of the pan and hold it at a slant to drain any excess liquid.  Wisk together eggs, egg whites, and cream. Spray or grease a pie dish put the spinach mixture in the bottom of the pie dish. Sprinkle with the blue cheese. Pour the egg mixture on top. Bake for 30 minutes. YUM!!!

This recipe has changed my morning routine! I used to make scrabbles every morning. I would dirty a plate, pan, spatula and silver wear every single day. Not I just cut this up and bring it to work. It also allows me to eat when my body actually gets hungry around 9 or 10, instead of force-feeding myself at 6:30. Life changing! Try it!
