Stuffed Bell Peppers

Stuffed Bell Peppers

4 Red Bell Peppers
1 lb Italian turkey Sausage
1 Head Cauliflower
1 16oz can Diced Tomatoes
1 6oz can Tomato Paste
1 Package Spaghetti Sauce Seasoning
1 Tablespoon Crushed Red Chili flakes
1 teaspoon Garlic Powder

Preheat oven to 350. In a large pan, brown the turkey sausage. Finely chop cauliflower in a food processor until it resembles the consistency of rice. Once the sausage is fully cooked. Add the last 6 ingredients and sauté another 5 minutes. While sautéing, wash, half, and seed the bell Peppers. Spray a large glass baking dish and place bell peppers in it. Fill each bell pepper with the mixture. They should mound up pretty high. Bake for 30 minutes. Enjoy!

This recipe was delicious!!!!! Best one I’ve made up so far. It has great flavor and was extremely satisfying. The cauliflower did a great job replacing the typical rice used in stuffed bell peppers. In the future I would add a diced onion and mushrooms. I also would probably stuff 6-7 peppers with that addition. I hope you like it! If you try it and do enjoy if please leave a comment.   1. Did you keep any overnight in the fridge? If so, how long did they keep?

  2. I will let you know! I plan on eating them through Wednesday night. My main assumption would be that they would be a better reheated in the oven vs. the microwave. And keep them uncovered so they don't sweat too much.
