Mango Chicken and Mexican “Rice” Tacos

3 Chicken Breasts
1 jar Mango Habanera Salsa
2 Avocados
1-Teaspoon Garlic Powder
1 White Onion
1 Head Iceberg Lettuce

Mexican Rice

2 Cloves Garlic Minced
1/4 chopped Onion
1/2 can diced tomatoes with chilies drained
½ a head of grated Cauliflower.




In a slow cooker put in chicken and pour the salsa over it. Cook on low for 8 hours. Sauté All the ingredients of the “rice”. Smash up the avocados with the garlic powder. Layer the chicken, rice and guacamole on a lettuce cup and enjoy!!!!
There were great, quick and easy. I didn’t LOVE the rice, but it added more veggies and made the recipe filling, so I would probably try another version again!
