Asian Lettuce Wraps

Love this recipe. Hoisin sauce unfortunately is high in sugar, but all in all, this recipe is pretty legit Paleo, and the flavor is well-worth it! If you are hardcore strict Paleo, then you can leave the sauce out and sweeten the dish with a tablespoon of honey instead. Enjoy!

 Asian Lettuce Wraps

2 large chicken breasts
1 can water chestnuts
1 can bamboo shoots
8 mushrooms
3 cloves of garlic
1 tablespoon gluten-free soy sauce
2 tablespoons hoisin sauce (or 1 tablespoon of honey)
1 tablespoon rice vinegar
2 teaspoons Asian chili pepper sauce
1 teaspoon sesame seed oil
1 bunch green onions
1 head iceberg lettuce

1. Boil chicken for 20 minutes. Cut it in small cubes and set aside.
2. Sauté minced garlic in sesame seed oil. Chop up water chestnuts and bamboo shoots. Add to sautéed garlic with the rest of the ingredients except for the green onions and lettuce.
3. Serve Asian chicken mixture in lettuce cups and garnish with green onions. Provide extra chili sauce or hoisin on the side.
