The BIGGER Challenge and Stuffed Portobello Mushrooms!

First there was the 30-day challenge.
Then there was the 60-day challenge.
Then there was the plan of the lifetime challenge of staying on track…


There were 16 days in Europe gorging on local cuisine like pasta, crepes, beer, and gelato.
10 days in Costa Rica with Piña Coladas, nachos, and french fries.
There was my birthday with fondue, pizza, cheesecake, and bread.
There was about 17 times doughnuts were brought in to work..
And about 13 pounds of weight gained back!
The hardest part of falling off track is getting back on. One bad day turned into more bad days and before I knew it I was back aboard the sugar-grain roller coaster of cravings, over-eating, and regret! So, I am attempting to get back on track right here. Blogging. Yes! I will officially be accountable to all 18 of my followers.
This is an attempt to get back into the shape I was in just a few short months ago, and feel bikini-ready once again. For tomorrow and the next day I made Stuffed Portobello Mushrooms to start my new journey towards healthy eating. 

Sausage and Sun-dried Tomato-Stuffed Mushrooms

4 portobello mushrooms
4 cloves of garlic
1 lb Italian turkey sausage
1 can artichoke hearts, chopped
½ onion, diced
1 jar sun-dried tomatoes, drained and chopped
1 head spinach, chopped
½ cup Paleo mayonnaise (olive oil)

1. Preheat oven to 400 degrees. Remove and chop mushroom stems. Set aside. With a spoon, scrape out the black ribs inside the mushrooms.
2. Peel and dice the garlic and add to a pan. Sauté garlic, onion, and turkey sausage until the sausage is cooked through.
3. Add remaining ingredients aside from mayo (including mushroom stems) into the pan and sauté another three minutes. Remove from heat and stir in mayonnaise.
4. Fill each mushroom with ¼ of the mixture. Place mushrooms on a baking sheet and bake for 12 minutes. Enjoy!
