Mother's Day Sausage Hash and Fried Egg
3 chorizo chicken sausages
1 sweet potato
½ red onion1 green bell pepper
1 jalapeño, seeded
⅓ cup chopped cilantro
½ teaspoon cumin
1 tablespoon olive oil
1. Chop up sausage and begin to sauté over medium-high heat. Peel and chop up the sweet potato into small cubes. Add potato and olive oil to the sausage.
2. While stirring the sausage and potato every minute or so, chop up the ½ onion, bell pepper, cilantro, and jalapeño. Add the chopped ingredients and the rest of the spices to the pan and sauté another 5 minutes.
3. Make sure the sweet potatoes are tender. In a separate frying pan, fry four eggs over easy and serve them on top of the hash. Garnish with an extra cilantro leaf and enjoy.
