Spicy Paleo Sloppy Joes


These were delicious, reheated well, and were very filling. I love spice, so I added a lot of crushed red pepper! Yum Yum!!

Spicy Paleo Sloppy Joes

Ingredients:

Bun
3 egg whites
1 eggplant
½ cup almond flour
salt

Meat
1 onion, finely chopped
3 garlic cloves, minced
1 zuchinni, chopped
1 red chili, diced
1 lb lean ground beef
1 can diced tomatoes, 14 oz
2 tablespoons worcestershire sauce
1 ½ beef stock cubes, dissolved in 1/4 cup water
1 can tomato paste, 6 oz
½ teaspoon oregano
½ teaspoon basil
1 pinch thyme
½ tablespoon crushed red pepper (add more or less depending on desired spice level!)

1.  Preheat oven to 375 degrees. Slice eggplant into ¼-inch rounds. Sprinkle with salt and lay them on paper towels for 20 minutes. Dredge them in egg and then almond flour--this is optional! It is great with just egg-dredged eggplant.
2. Place rounds on foil-covered baking sheet and bake for 15 minutes, flip, and cook an additional 10 minutes.
3. While eggplant is baking, sauté onion, garlic, and red chili until cooked through. Brown the meat. Add tomatoes(with the juice) and simmer with all other ingredients.
To assemble: take two eggplant rounds and cover with 'Sloppy Joe' meat mixture.
