6 mushrooms, chopped
1 lb Italian turkey sausage
½ red bell pepper, chopped1 can tomato paste, 6oz
1 tablespoon basil
½ tablespoon garlic powder
¼ tablespoon oreganocooking spray
1. Preheat oven to 400 degrees. Boil zucchini until tender. Drain and let cool. While the zucchini cools, cook sausage in a pan.
2. Chop up mushrooms and bell pepper. Add to the cooked sausage and sauté another 3-5 minutes. Cut the zucchini in half length-wise, and with a spoon gently scrape out the inside of each. Set aside.
3. Add the inside of the zucchinis, tomato paste, and spices into the meat mixture and cook for another minute. Spray a large glass baking dish with cooking spray.
4. Place empty zucchini shells in the pan and fill each with the mixture. If desired, sprinkle with a little shredded Parmesan cheese (not Paleo, so avoid if strict).
