Mexican Stuffed Bell Peppers

These were really tasty. They got the seal of approval from my boyfriend too! If you like a more rich and creamy stuffed pepper, add a six ounce can of tomato paste.

Mexican Stuffed Bell Peppers

1 lb lean ground beef (grass-fed is ideal)
1 onion, chopped
1 can tomatoes with green chilies
½ can black olives, sliced
4 yellow bell peppers
2 tablespoons chili powder
½ tablespoon garlic salt
1 tablespoon cumin
½ tablespoon red pepper
1 tablespoon paprika
1 tablespoon onion powder
1 teaspoon oregano
1 tub fresh salsa
cilantro, chopped (about a handful)
olive oil in misto sprayer

3 Avocados
1 Teaspoon Garlic Powder

1. Preheat oven to 350 degrees. Brown beef with all the seasonings. While meat is browning, chop the white onion and cilantro. Add onion and cilantro to the beef and sauté another 5 minutes.
2.  Halve and seed the bell peppers. Take one of the bell pepper halves and finely dice it. Add diced bell pepper, canned tomatoes, and olives to the meat mixture.
3. Spray a glass pan with olive oil and place bell peppers open side up. Push the meat mixture to one side of the pan and tilt it so that any excess liquid drains to the other side. Spoon out any excess liquid and discard.
4. Fill each pepper with the meat mixture. Bake for 30 minutes. While they are baking, mash up the avocados and garlic powder. When they are done, scoop some guacamole on top and use salsa as desired.

  6. I am glad I found this post again so I could tell you how good these were. I ate them for three days in a row! Also, I made enough filling and froze them. So for a quick dinner I just need to stuff and bak.

    I just made them again last night. They are more Italian in flavor and are very simple and delicious. I added mushrooms to them this time and extra crushed red pepper for a kick! LOVE THEM and are definitely worth trying as well. Thanks for the encouragement!
