Creamy Pesto 'Pasta' and Shrimp

I really really enjoyed this recipe. This is my attempt at home-made pesto. It came out very garlicky, so I recommend using it as a base to cook shrimp, chicken, and even eggs. My friend Sam gave me the idea when she sautéed zucchini and garlic the other night! I know that dairy isn’t ideal, but I think the three tablespoons of Parmesan really made this dish! It was flavorful and satisfying and if a little bit of cheese is needed, then so be it!

Creamy Pesto 'Pasta' and Shrimp

1 lb shrimp 
1 cup light coconut milk
½ tablespoon coconut flour
2 tablespoons butter or ghee
2 zucchinis, julienned
1 tablespoon olive oil
3 tablespoons grated Parmesan cheese (omit if strict Paleo)
salt to taste

Pesto Sauce
3 bunches of fresh basil
7 cloves of garlic
½ cup walnuts
2 tablespoon pine nuts
1 cup light coconut milk

1. Combine all pesto sauce ingredients in a food processor. In a large frying pan, sauté the julienned zucchinis in olive oil and 1 tablespoon of  the pesto sauce until the zucchini reaches your desired softness for 'noodles'. Take off heat.

2. In a small saucepan melt 1 tablespoon of butter and 2 tablespoons of pesto. Turn the temperature to medium-low heat and add in the coconut milk and coconut flour. Let that simmer and stir the sauce occasionally. Once it begins to thicken (about 5 minutes) add in the grated Parmesan and season it with salt to taste (omit cheese if strict Paleo) and set aside.

3.  Heat 1 tablespoon of pesto, a tablespoon of butter, and the shrimp in a medium-sized frying pan. Sauté the shrimp until heated through.  Plate the noodles and shrimp with the sauce on top and you are ready to enjoy!
