Valentines Ahi and Brocoli Slaw

On Valentines day I allowed a few cheats, delicious crab won tons, and white chocolate cheese cake. But the main meal was paleo friendly, easy and fast. It was delicious. Here is a very simple brocolli slaw recipe.

Brocoli Slaw
1 bag Broccoli Slaw
Newmans Own Sesame Asain Dressing (as much as desired)
Sliced almonds for garnish

Chinsse Chicken Salad and Egg Drop Soup

This was a great lunch, packed with protein and very very easy. I have always loved this salad recipe, and hopefully you will too!

Chinese Chicken Salad
1/4 bad shredded Cabbage
1 table spoon sliced Almonds
1 chopped Green Onion
1/2 cubed Chicken Breast

Dressing:
1/2 Tablespoons Glueten Free Soy Sauce
1/2 tablespoon Rice Vinegar
1/2 Tablespoon Honey (or sweetner of choice)
1 Teaspoon Olive Oil

Toss all ingredients together and enjoy!!
Here is the recipe I found for egg drop soup. I thought it turned out pretty well and rounded out the meal nicely!

I left out the food coloring, added and extra egg, and of course gluten free soy sauce!

Entertaining: Endive Club Delight

Let me begin by saying, I was basically raised by a carbon copy of Martha Stuart. My mother is loving, and her was of showing this is by cooking and entertaining. If you ask most paleo folks, this is can be a challenge. I too inherited the gene where you live by the belief someone's heart is connected to their taste buds. So Here is a little recipe for when you are having people over. Everyone loved them, and no one complained about the "rabbit food" that was served.

Endive Club Delight

3 heads of Endive
1 can Chicken Breast drained
1/2 package bacon
2 Tablespoons Mayonaise (or make your own)
1 avacado
1 teaspoon garlic powder
pepper

Mix chicken,  mayo, galic powder and and pepper. Wash each endive cup and dry. Cook bacon according to the package and let cool. Once cool, chop the bacon into "bits". Then spoon chicken mixture into each cup, layer with bacon and chopped avacado. Serve and Enjoy! this could also make a great lunch.
I served this with meatballs and pineapple as well. It was a great night, great food and no guilty feelings!
