Stuffed Bell Peppers
Stuffed Bell Peppers
4 Red Bell Peppers
1 lb Italian turkey Sausage
1 Head Cauliflower
1 16oz can Diced Tomatoes
1 6oz can Tomato Paste
1 Package Spaghetti Sauce Seasoning
1 Tablespoon Crushed Red Chili flakes
1 teaspoon Garlic Powder
This recipe was delicious!!!!! Best one I’ve made up so far. It has great flavor and was extremely satisfying. The cauliflower did a great job replacing the typical rice used in stuffed bell peppers. In the future I would add a diced onion and mushrooms. I also would probably stuff 6-7 peppers with that addition. I hope you like it! If you try it and do enjoy if please leave a comment. I need some inspiration to keep me bloging!

Mushroom and Spinach Crustless Quiche
1 Bunch of Spinach
8-10 Mushrooms
4 Eggs
1 Cup egg whites or Egg Substitute
¼ Cup Heavy Cream
½ Tablespoon Garlic Salt
½ Cup Blue Cheese
Pre-heat oven to 350. Chop the spinach and mushrooms. Sauté the spinach and mushrooms with the garlic salt. Press the vegetable mixture to one side of the pan and hold it at a slant to drain any excess liquid. Wisk together eggs, egg whites, and cream. Spray or grease a pie dish put the spinach mixture in the bottom of the pie dish. Sprinkle with the blue cheese. Pour the egg mixture on top. Bake for 30 minutes. YUM!!!
This recipe has changed my morning routine! I used to make scrabbles every morning. I would dirty a plate, pan, spatula and silver wear every single day. Not I just cut this up and bring it to work. It also allows me to eat when my body actually gets hungry around 9 or 10, instead of force-feeding myself at 6:30. Life changing! Try it!

Twice Baked Cauli- Tots
1 Head Cauliflower
8 Pieces Cooked Bacon
3 Green Onions
1 Clove of Garlic
Boil Cauliflower for 10 minutes. Preheat Oven to 400 degrees. Cook Bacon in a frying pan and pat dry with a paper towel. In a food processor blend together the cooked, drained cauliflower and remaining ingredients. With a cookies scooper or large spoon, scoop the mixture on to a foil lined baking sheet. You can place them close together because they don’t melt down like cookies do. Bake for 20 minutes, flip and bake another 20 minutes.
** Mine took awhile to brown; if yours aren’t the desired crunchiness, bake for longer.
This recipe was delicious! The only down falls was that it was a bit timely and only makes about 16 tots! I could have eaten all of them they were so delicious. In the future I would double the recipe for sure! These have all the flavor of twice bakes potatoes and are combined with the fun format of easy-to-eat tots. Loved the!
