Pecan Pie Bars

If you follow my blog, you may have noticed I don't post too many desserts. Trust me when I say, it is not because I don't love sweets. It is the exact opposite. I grew up in a house where there were rarely sweets, but if they were there you ate them until they were gone! At the top of my list of favorite desserts is Pecan Pie. I seriously have the best/worst taste in food sometimes. I think that it is one of the most unhealthy desserts, filled with corn syrup and sugar! I figured if I could Paleo-ify this dessert I could do anything! This Pecan Pie Bars are great for a few reasons. One is that they have natural and healthy ingredients! The second is that since they are cut into small squares you can have a bite instead of a giant slice of pie. Lastly, they are so easy to share this way. If you are anything like me, you will want to bring these to a gathering to share with friends (rather than devour them on your own at home!) So try out this Paleo recipe for your next party or event!

Pecan Pie Bars

1 ¾ cup blanched almond flour
1 egg
1 tablespoon coconut oil
½ teaspoon arrowroot powder
¼ teaspoon sea salt

8 ounces pitted dates
2 eggs
¼ cup maple syrup
½ teaspoon vanilla
1 cup pecans, chopped

1. Preheat the oven to 350 degrees. Add the almond flour, egg, coconut oil, arrowroot powder, and sea salt to a food processor. Pulse it until the dough forms a ball. Press the dough into a 12-inch glass casserole dish. Bake for 15 minutes.

2. Add the dates to the food processor and blend on high for 1 minute. Add the eggs, maple syrup, and vanilla. Process on high until the filling is smooth. Pour the filling mixture over the partially cooked crust. Evenly sprinkle the pecans over the top. Bake for another 30 minutes. Allow the bars to cool before cutting.

  1. Could you use coconut flour in place of the almond flour? If so what would you recommend? I was thinking 3/4 cup coconut flour and add 2 eggs or some applesauce for additional liquid. Any thoughts?

  2. I find that coconut ends up tasting pretty dense and dry in baking. Maybe I will try to make a plantain pie crust. I can experiment soon :)

  5. Thanks for a great recipe. These ended up working really well for a gluten-free mom and a pecan pie loving step-dad. I ended up doubling the recipe kind of on a whim, because the dough came out seeming like not enough for the glass dish I chose. In the future, it'd be really helpful to list actual recommendations for the glass dish. I also added about 1/4 cup of coconut flour to the crust mixture which worked out just fine. I would say the crust is just a little bit bland, but all of the good stuff on top really makes up for it. :)

  6. Thanks for the recipe, these were great. I might add just a tiny bit more crust as it didn't really cover the bottom of my dish, and I'm definitely adding a parchment sling to the dish first to make it easy to get out. I had a heck of a time trying to get the bars off the bottom of the dish. They weren't the prettiest bars, but they were tasty. Going to make them for Thanksgiving.

  7. My sis Jaime made these at Thanksgiving and I nearly inhaled them all. I finally found the recipe (because Santa didn't bring me your book!) and decided to make today. There must be a mistake in the dish size as there is no way for these to come out like the picture if even attempted in a 12" dish. I used a pie plate and worked "ok" but definitely not as thick as the picture shows. Tasty just the same though. This is a great recipe and now that I've satisfied my craving I can finally step away from the dish long enough to whip up some coconut milk to top off my third helping! :D

    1. side note to anyone who depends on reviews as much as I do: 1 - double the recipe and use a 9" square dish (or pie plate) and 2 - BUY "Happy Hour" - I've tried many of the recipes (via other people) and they are to die for! I'm off to the store tomorrow to finally get one of my own!
