Monday Mid-Day Munchies
I'm going to try a new weekly post about lunch. I don't know about you, but I often struggle with planning my mid-day meals. By posting my lunches, I hope to give you some ideas for what to eat. I normally bring my lunch to work, so these are all travel-friendly meals. Hope you enjoy!
Today's lunch was broccoli slaw with Annie's Low Fat Poppy Seed Dressing (not Paleo, but very convenient and contains all-natural ingredients), and a turkey burger from Costco with Chipotle Mayo (recipe below) and some carrot sticks.
1 teaspoon apple cider vinegar
1 teaspoon mustard
2 egg yolks
1-3 chipotle chilies in adobo sauce
½ of a jalapeño pepper
1 teaspoon honey
1 clove of garlic
Start by adding the apple cider vinegar, mustard, and egg yolks to a blender.
2.While the blender is on its lowest setting, slowly drizzle in the olive oil.
Do this as slowly as possible.
3. Once you have added the olive oil, add the chilies (1-3 depending on the spice level desired), jalapeño, honey, and garlic. Blend on high until almost completely smooth.
