Paleo Avocado Margarita


Don’t let the name mislead you; this margarita does not taste like avocado. The avocado just gives this drink an amazingly creamy consistency and a beautiful green color. Feel good drinking this cocktail, knowing that it is high in healthy fats and antioxidants.
By using a whole orange (added fiber) and avocado (added fat) it will help you avoid a big blood sugar spike. This also is a yummy treat if you exclude the alcohol--just add an additional ¼- ½
cup of water instead.

Preparation time: 5 minutes
Serves: 4

1 avocado
1 orange, peeled*
1 cup lime juice (or the juice of 4 fresh limes)
4 tablespoons honey*
4 cups ice
6 ounces tequila (optional)

1. Peel and pit the avocado. Add the avocado, orange, lime juice, honey, ice cubes, and tequila to a blender. Blend on high until completely smooth. Serve immediately

* If you don't have a very good blender, juice the orange and just add the juice.
*Some people prefer a sweeter Margarita. If need be add a bit more honey to taste. The orange should add some sweetness too if you want to try and skip the honey!

  1. I just tried this. I have just one word....amazing!!!! I love margaritas but hate the effect of sugar overload. I was doubtful it would be five o'clock somewhere worthy..but it is!
