Sweet and Sour Skewers

Sweet and Sour Skewers

These sweet and slightly spicy skewers are perfect for throwing on the grill during a hot summer night. The ingredients are pretty simple, but the results are tasty!

Prep time: 25 minutes (plus 1 hour to marinate)
Cook time: 10-12 minutes
Serves: 4

3 chicken breasts
1 lb raw shrimp, peeled
1 ½ red bell pepper
1 large yellow onion
1 pineapple
sea salt to taste

⅔ cup canned crushed pineapple, with juice
⅓ cup coconut aminos
⅓  cup rice vinegar
1 tablespoon tomato sauce
1 tablespoon honey
2 teaspoons fresh ginger, minced
½ teaspoon red pepper

1. In a blender, add the crushed pineapple, coconut aminos, rice vinegar, tomato sauce, honey, ginger, and red pepper. Blend on high until smooth.
2. In a glass dish, add the chicken, shrimp, and ⅓ of the sauce. Marinate for one hour. Soak the wooden skewers.
3. Peel, core, and cube the pineapple. Cut the bell pepper and onion into 1” chunks. Assemble the skewers alternating between the chicken, shrimp, pineapple, bell pepper, and onion.
4. Preheat the grill to medium-high heat. Baste the skewers with the remaining sauce. Grill them for 3-5 minutes per side, or until the meat is cooked through.
