Taco Smash Lunch Idea

Taco Smash

This taco smash recipe was inspired by the food truck: The Hunter and the Farmer. They are a local Paleo food truck that serves up some tasty dishes. Unfortunately, I don't always have time to find them on my short lunch break.  This week, I attempted one of their dishes at home, inspired by their popular menu item 'Taco Smash'. This meal is filling, easy, and re-heats very well!

 Originally, I think their 'smash' is primarily yams at Hunter and Farmer. Here, to lower the total carb count, I mashed in some carrot and turnip as well. Also, I topped it with some fresh cilantro, onions, and tomatoes. Enjoy!

Prep time: 12 minutes
Cook time: 25 minutes
Serves: 4

2 sweet potatoes, peeled
1 carrot, peeled
1 small turnip, peeled
sea salt

Taco Meat
1 lb ground beef
1 ½  tablespoons chili powder
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon crushed red pepper (or less if you don't love spicy)

2 small avocados, sliced
1 roma tomato, diced
¼ cup cilantro, minced
⅓ cup white onion, diced
hot sauce!

1. Cube the sweet potato, carrot, and turnip. Cover them with water in a pot. Bring the water to a boil, and cook for 20 minutes. Drain the mixture. In a large bowl, combine the vegetables, sea salt, and pepper. Mash them together.

2. In a medium frying pan over medium-high heat, brown the beef, breaking it up into crumbles. Mix in the chili powder, cumin, garlic powder, onion powder, paprika, and red pepper as the meat is browning.

3. To assemble: put a scoop of smash on a plate. Top with ¼ of the meat mixture. Sprinkle with the toppings!

I am still thinking about how awesome it was and am SO super happy that I have a serving leftover to have for my lunch today!
