Amazing Caveman Cookies from Bob Boll
My "uncle"(friend of my parents) Bob Boll, recently visited my parents. He works as a chef/teacher at a culinary school. My parents were shocked and pleased to learn that Bob is actually Paleo too. When he and his wife visited, my parents made them lunch from my upcoming book: Paleo Happy Hour. His favorite was my recipe for Tuna Tar Tar. My mom sent him the recipe and he sent two in return. Here is the first one!
These chocolate-y chewy cookies are a few bites of Paleo heaven. I typically don't bake in my house, because of lack of self control, but this recipe is worth indulging in. The walnut and chocolate chips bring this cocoa flavored cookie to the next level! Unlike some almond/coconut flour-based cookies, these aren't too dense which I loved.
Cook time: 20 minutes
Makes about 48 cookies
½ cup shredded coconut
1 ¾ cup blanched almond or coconut flour
1 teaspoon cinnamon
1 cup coconut sugar
¼ cup cocoa powder
1 teaspoon baking powder
1 teaspoon espresso powder
1 cup toasted chopped walnuts
1 cup Enjoy Life chocolate chips
3 large eggs
¼ cup olive oil
2 teaspoons pure vanilla extract
¼ cup unsweetened apple sauce
1.Preheat oven to 350 degrees. In a large bowl, combine the coconut flour, cinnamon, sugar, cocoa powder, baking powder, espresso powder, walnuts, and chocolate chips. Set aside.
2. Separate the egg yolks and whites and place in separate mixing bowls. Beat the egg whites until soft peaks form.
3. In the bowl with egg yolks, combine the olive oil, vanilla extract, and applesauce. Add to the flour mixture.Then, add the egg whites and stir to combine into a soft dough.
Form the dough into one ounce (golf ball size) balls. Lightly press into a cookie shape on a silicone or parchment paper-lined cookie sheet. The cookies will not expand during cooking.
Bake for 20 minutes. Cookies will be light brown on top. Do not over bake.
