Frankenstein’s Key Lime Pie Martini
Halloween isn’t just a holiday for kids; adults like to have their own fun too. These key lime pie martinis will have you doing the monster mash in no time! Beware: the drinks are strong and tasty, which sometimes leads to getting wasty (wasted didn’t rhyme). Indulge in a spook-tacular drink this Halloween instead of reaching for the candy bowl.

Prep time: 5 minutes
Chill time: 20 minutes
Serves: 4


Pie Crust Rim:

1 ½ tablespoons coconut sugar
1 tablespoon blanched almond flour
1 slice of pineapple


4  shots vodka
1 cup cubed pineapple, fresh or canned
¼ cup pineapple juice
½ cup coconut milk
⅓ cup key lime juice
2 tablespoons coconut sugar
2 tablespoons vanilla extract

1.     In a large glass add the pineapple juice, coconut milk, key lime juice, and vanilla extract. Chill in the freezer for 20 minutes.  Add the juice mixture to a blender along with the vodka, cubed pineapple, and coconut sugar. Blend on high until completely combined.
2.     On a plate, gently stir together the coconut sugar and blanched almond flour. Take the slice of pineapple and rub it on the rim of the glass.  Then roll the rim in the 'pie crust' mixture. Repeat with all three glasses and fill each with the blended martini liquid.
