Roasted Maple Balsamic Carrots

Roasted Maple-Balsamic Carrots

These carrots are to die for. I could eat all of them in one sitting as a meal by themselves. YUM.

Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
4-6 large carrots, peeled
1 teaspoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon maple syrup
 ½ teaspoon thyme
sea salt
pepper
avocado oil (or oil of choice) in a misto oil sprayer

1.Preheat the oven to 400 degrees. Cut the carrots into quarters length-wise. Then, cut the quarters into 2-inch pieces. In a large bowl, toss the carrots with the olive oil, thyme, and a sprinkle of sea salt and pepper.
2. Line a baking sheet with foil and spray it with the avocado oil. Spread the carrots in a single layer on the sheet. Bake for 20 minutes. Then, put the carrots back in the bowl and toss them with the balsamic vinegar and maple syrup. Return them to the oven for 5 more minutes and serve.

  1. These look WAY better than french fries to me. I'm going to make them tomorrow, but omit the maple syrup (until the 21DSD is over. *sigh*).
